Mashed Potatoes Ole

These mashed potatoes ole would go well with tacos or another Mexican themed dinner. Even a pit beef sandwich would taste great with these as a side!

Go Straight to the Recipe

This is a way to serve mashed potatoes that you have probably never heard of before now! I found this recipe on a container of Cheese flavored French Fried onions, to the best of my memory. Those are no longer made or sold, but you can use plain French Fried onions instead. I am sooo glad I saved this recipe!

I don’t make it very often, because I’m the only one that likes it. So when I needed to take something to a potluck dinner, I decided to make my special Mashed Potatoes Ole.

Here are the Ingredients You Will Need:

  • French Fried Onions
  • Instant mashed potatoes– either roasted garlic or cheese flavored will work
  • salsa
  • shredded cheddar or “fiesta” cheese
  • sliced black olives

Make the mashed potatoes according to the package directions. I put mine in a crockpot this time since I was taking it to a potluck. But otherwise put it in a baking dish for the oven.

I added extra water to mine so it wouldn’t dry out since I wasn’t serving it immediately.

Add the shredded cheese. I’m also making a double batch, here.

Add dots of salsa. I did not add as much as the recipe called for, and I’m glad I didn’t.

Add sliced black olives.

Put the french fried onions on a baking sheet and bake just a few minutes until golden brown. Be careful not to burn them… they can go from golden brown to burnt pretty quickly.

I like nearly anything with cheese on it, so this was a winner for me. I understand why people may not like the combination, though.

This is a Mexican inspired way to spice up your mashed potatoes!

Ingredients

  • 1 box/bag roasted garlic mashed potatoes
  • 3/4 c. shredded cheddar cheese
  • 1/4 c. salsa
  • 3 TBLSP sliced black olives
  • 3/4 c. French Fried Onions
  • sour cream optional
  • cilantro optional

Instructions

  • Make potatoes as directed on box or bag.
  • Put in a 2 quart dish.
  • Top with cheese, salsa, olives, and french fried onions.
  • Bake at 375 degrees for 3-5 minutes until onions are golden.
  • Serve with sour cream and chopped cilantro if desired.

Notes

If you want, add a little extra water to the mashed potatoes (so they don’t dry out) and put in a crock pot to keep warm for serving to a crowd or taking to a potlock. I did this— with a quadrupled recipe! If you do it this way, toast the french fried onions separately on a baking sheet, and then add to the crock pot.
